Fresh and Easy Mango Salsa

This is a really fun and tasty mango salsa recipe that will be sure to impress your guests at your next party gathering.  We love making this during the summer, since it adds a unique colorful dish to the table.

It goes great if you are serving them with fish tacos, quesadillas (or any Mexican dish for that matter).  I have also served it alone with tortilla chips or even standalone as a really nice alternative to a leafy salad.  Recently, it was a fun accompaniment to hamburger and hotdog BBQ spread.

Using ripe mangoes will help get the proper sweetness coming out of this salsa.  The recipe is what I use when I’m expecting about 10 people over and serving this as a side dish.  You can modify the recipe as appropriate for your needs.

Ingredients:
4 ripe mangoes (diced)
1-1/2 onions (chopped)
1/3 cup fresh cilantro (coarsely chopped)
1-1/2 Red or Orange Bell peppers (seeded and chopped)
2 limes (juiced)
1/3 tsp salt (to taste)
1/4 tsp Black Pepper (to taste)

Optional
1 jalapeno (seeded and chopped)

Instructions:
1. Combine all fresh ingredients in a bowl.
2. Optionally, for a really nice sweet-and-spicy combination, add a seeded & chopped jalapeno.
3. Pour freshly squeezed lime juice and mix all ingredients well. Add salt and pepper to your preferred taste.
4. Cover the bowl and place in the refrigerator for 15 minutes before serving.

Prep Time: 15 mins
Total Time: 30 mins
Serves: Approx 10 people as a side dish
